But what exactly is this strange American delight?
The traditional version is lye (sodium hydroxide) soaked dried corn, which removes the germ and the hard outer hull from the corn, which makes them easier to digest, more palatable and easier to process. The whole process is called “Nixtamalization”!

The company was established in Indianapolis, Ind. in 1861 and one of their original canned products was pork and beans, which proved very popular with the army during the American Civil War.
The lid is still attached.
